Every time i prepared veg pasta, Just give a try of this egg pasta with broccoli and same indian masala :)

Ingredients

  • Pasta - 1 cup
  • Eggs - 2
  • Onion - 1
  • Tomato - 1
  • Chopped Garlic - 1 tablespoon
  • Red chilli powder - 1 tsp
  • Broccoli- 1/2 cup
  • Chopped capsicum - 1/4 cup
  • Turmeric powder - 1/4 tsp
  • Garam masala powder - 1/2 tsp
  • Chopped coriander leaves - 2 tablespoon
  • Salt - As needed
  • Olive oil - 3 tablespoon
  • Cumin seeds - 2 tsp

Method

1. Boil 3 cups water and add the pasta, required salt. Cook as per the package. 
2. Drain the water once the pasta cooked.
3. Scramble the eggs in pan and keep aside.
4. Heat a kadai with oil and temper with jeera.  Once splutters, add garlic and stir it.
5. Add finely chopped onion and fry until transparent. Add broccoli and Capsicum.
6. Once it half cooked,  add tomato, red chilli, garam masala, turmeric powders. Fry until the oil separates.
7. Add the Scramble eggs and stir well for 30 sec. 
8. Add the cooked pasta. Stir well for a minute and garnish with chopped coriander leaves.

This fits in perfect for lunch boxes or for dinner.
I have tried pasta in Chinese style 3 times before. All times, I could not make the taste like restaurants. So after that I never ever try that way :).  But later I tried with Indian spices it turned out great.  So I should stick to this recipe. I prepared this salad because it contains lots of fresh veggies from my kitchen garden. It is so good, and because it makes its own dressing, it's very healthy as well. 


Ingredients

  • Chopped cucumber - 1 cup
  • Cashew nuts - 2 tsp coarsely grind

Dressing

  • Olive oil - 1 tablespoon
  • Lemon juice - 1 teaspoon
  • Salt - ½ teaspoon
  • Black paper - 1/8 teaspoon

Method

  1. Dressing: In a bowl, mix all the dressing ingredients well. Set aside.
  2. Cut all the ingredients and mix together.
  3. Just before serving, add the dressing. Mix it well.

Ingredients

  • Egg - 4 nos
  • Onion - 1 large
  • Tomato - 2 large 
  • Ginger garlic paste - 1 tbsp
  • Red chilli powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 1 and 1/2 tsp
  • Green mirchi - 2
  • Garam masala -1/2 tsp
  • Pepper powder - 1/4 tsp
  • Salt to taste
  • Oil - 3 tsp
  • Coriander & mint leaves - 2 tbsp finely chopped

Method


  1. In a sauce pan add 2 cups water bring to a boil add salt and the eggs boil for 10 minutes. Transfer the eggs to cold water and remove the shell, set aside
  2. In a wide non stick pan, heat oil add the onions, saute until transparent. Add the ginger garlic paste and saute until golden. Now add the spice powders - turmeric, red chilli, garam masala, coriander, pepper powder and salt. Mix well
  3. Add the tomato and cook until the raw smell goes away (3 minutes). Add 1 cup water and bring to a boil. 




4. Bring flame to simmer and cook further for 3 minutes. Add eggs and close with lid. Immediately switch off the flame. Egg can cook in the gravy heat in another 3 - 4 mins.


Serve hot with piping hot idly/dosa/ chappati.
